This creamy, spicy, and hearty soup is made in the crockpot with simple ingredients like chicken, enchilada sauce, black beans, and cream cheese. It’s perfect for a crowd and comes together in under 30 minutes of active time.

Ingredients

Scale
  • 1.5 lbs (about 680g) boneless, skinless chicken breasts or thighs
  • 1 can (19 oz or 540ml) red enchilada sauce
  • 2 cups (480ml) low-sodium chicken broth
  • 1 can (15 oz or 425g) black beans, drained and rinsed
  • 1 cup (150g) frozen or canned corn
  • 1 can (10 oz or 283g) diced tomatoes with green chiles (like Rotel)
  • 4 oz (113g) cream cheese, softened and cubed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp (30ml) fresh lime juice
  • Optional toppings: shredded cheese, sour cream, fresh cilantro, diced avocado, crushed tortilla chips, hot sauce

Instructions

  1. Place the chicken at the bottom of the crockpot.
  2. Pour in the enchilada sauce, chicken broth, and diced tomatoes with green chiles (undrained). Sprinkle with chili powder, cumin, garlic powder, onion powder, and a pinch of salt and pepper. Stir gently.
  3. Add the drained black beans and corn. Stir once more.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken shreds easily.
  5. Shred the chicken in the crockpot using two forks or a hand mixer on low speed.
  6. Add the cubed cream cheese and stir until melted and smooth (about 2-3 minutes).
  7. Stir in the fresh lime juice. Taste and adjust seasoning as needed.
  8. Serve immediately with desired toppings.

Notes

For a dairy-free version, swap cream cheese with cashew cream or dairy-free cream cheese. For gluten-free, ensure enchilada sauce is certified GF. If soup is too thin, mix 1 tbsp cornstarch with 2 tbsp cold water and stir in during the last 15 minutes of cooking. Leftovers keep in the fridge for up to 4 days and freeze for up to 3 months.
