  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup (65 g) all-purpose flour
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • Optional: 1/2 tsp espresso powder
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 425°F (220°C). Generously butter six 6-ounce ramekins and dust with cocoa powder, tapping out excess.
  2. In a heatproof bowl over simmering water, gently melt bittersweet chocolate and softened unsalted butter together, stirring occasionally until smooth and glossy. Remove from heat and let cool slightly.
  3. In a separate bowl, whisk room-temperature eggs with granulated sugar until thick and pale, about 3-4 minutes.
  4. Slowly pour the melted chocolate mixture into the egg mixture while gently folding with a spatula. Add vanilla extract, salt, and optional espresso powder. Sift flour over the batter and fold until just combined, avoiding overmixing.
  5. Divide batter evenly among prepared ramekins. Place on a baking sheet and bake for 12-14 minutes until edges are set but centers remain soft and jiggly.
  6. Let cakes cool in ramekins for 1-2 minutes, then invert onto plates. Dust with powdered sugar if desired and serve immediately with vanilla ice cream or fresh berries.
