Easy 10-Minute Smoked Salmon Cucumber Bites

A quick, fresh, and healthy snack featuring crisp cucumber rounds topped with creamy lemon-dill cream cheese and smoky salmon. Perfect for light lunches, appetizers, or casual get-togethers.

  • 1 large English cucumber, washed and sliced into 1/4-inch thick rounds
  • 4 ounces smoked salmon, thinly sliced
  • 4 ounces cream cheese, softened (plain or whipped; dairy-free coconut-based cream cheese optional)
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon capers, drained (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt, to taste

Instructions

  1. Rinse the cucumber under cold water and pat dry. Slice into 1/4-inch thick rounds using a sharp knife. Set aside on a paper towel to remove excess moisture for 2-3 minutes.
  2. In a mixing bowl, combine softened cream cheese, fresh lemon juice, finely chopped dill, sea salt, and freshly ground black pepper. Stir until smooth and well blended. Whip with a fork or small whisk if a lighter texture is desired.
  3. Spread about 1 teaspoon of the cream cheese mixture evenly onto each cucumber slice.
  4. Tear smoked salmon into bite-sized pieces (about 1 inch squares) and place one piece on top of each cream cheese layer. Add one or two capers on top if using.
  5. Sprinkle extra fresh dill or black pepper over the bites for garnish. Optionally, drizzle a few drops of fresh lemon juice for added zest.
  6. Serve immediately or chill covered with plastic wrap for up to one hour before serving.

Notes

Pat cucumber slices dry to prevent sogginess. Keep cream cheese at room temperature for easier spreading. Do not overload toppings to keep bites stable. Can double recipe for parties. Store leftovers covered in refrigerator up to 24 hours and blot cucumber before serving to refresh crispness.
