  • 1 ripe medium banana, mashed or sliced
  • 2 tablespoons (about 32g) peanut butter (creamy or crunchy)
  • Optional: pinch of cinnamon
  • Optional: splash of vanilla extract
  • Optional: 2-3 tablespoons milk (dairy or plant-based) for thinner consistency

Instructions

  1. Mash 1 ripe medium banana with a fork until smooth but still a little chunky.
  2. Add 2 tablespoons of peanut butter and mix well with the banana until combined and creamy.
  3. Stir in ½ cup of old-fashioned rolled oats until evenly coated. Add 2-3 tablespoons of milk or water if you prefer thinner oats.
  4. Optionally, sprinkle a pinch of cinnamon or a few drops of vanilla extract and mix well.
  5. Seal the jar or container and refrigerate overnight for at least 6 hours, ideally 8-10 hours.
  6. In the morning, stir the oats and add a splash of milk if too thick. Adjust sweetness if needed.
  7. Serve cold straight from the jar or transfer to a bowl. Optionally top with banana slices, honey, or granola.
