  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup soy sauce
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 3 cups jasmine rice
  • 4 1/2 cups water
  • 1 large head broccoli, cut into florets (about 4 cups)
  • 1 tablespoon olive oil or butter (optional)
  • Salt and pepper, to taste
  • Optional garnishes: sesame seeds, sliced green onions, red pepper flakes

Instructions

  1. Rinse 3 cups of jasmine rice under cold water until water runs clear. Combine rice with 4 1/2 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Turn off heat and let sit, covered, for 10 minutes. Fluff with a fork before serving.
  2. In a medium bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. Add chicken pieces and toss to coat. Let marinate while prepping broccoli.
  3. Heat a large non-stick skillet over medium-high heat. Add marinated chicken along with the sauce. Cook, stirring occasionally, until chicken is cooked through and sauce begins to thicken, about 8-10 minutes. Stir in the cornstarch mixture and cook another 2-3 minutes until sauce is glossy and clings to chicken.
  4. While the chicken cooks, bring a pot of water to simmer and place broccoli florets in a steamer basket over it. Cover and steam until broccoli is bright green and just tender, about 5 minutes. Alternatively, microwave broccoli in a covered bowl with 2 tablespoons water for 3-4 minutes.
  5. Divide cooked rice evenly into 5 meal prep containers. Top each with an equal portion of teriyaki chicken and steamed broccoli. Garnish with sesame seeds and sliced green onions if desired.
  6. Let meal prep bowls cool completely before sealing containers. Store in the fridge for up to 5 days.

Notes

Let the rice rest after cooking to keep it fluffy. Monitor heat when cooking chicken to avoid burning the sauce; add a splash of water if sauce dries too fast. Steam broccoli separately to keep it crisp-tender. Marinate chicken for at least 10 minutes for best flavor. Reheat with a splash of water on broccoli to refresh texture.
