This easy 5-ingredient crockpot chili is the ultimate comfort food for busy weeknights. With just ground beef, canned tomatoes, tomato sauce, kidney beans, and chili seasoning, you can have a hearty and delicious meal simmering in minutes.

  • 1 pound ground beef (80/20)
  • 1 (15-ounce) can of diced tomatoes (undrained)
  • 1 (15-ounce) can of tomato sauce
  • 1 (15-ounce) can of kidney beans (drained and rinsed)
  • 1 (1-ounce) packet of chili seasoning

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes until no longer pink. Drain excess fat if desired.
  2. Transfer the browned beef to a 6-quart or larger slow cooker.
  3. Add the undrained diced tomatoes and tomato sauce to the slow cooker. Stir to combine.
  4. Add the drained and rinsed kidney beans. Stir everything together.
  5. Sprinkle the chili seasoning packet over the top and stir well to ensure even distribution.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. About 30 minutes before serving, stir the chili. If too thick, add a splash of beef broth or water. If too thin, leave the lid off to let liquid evaporate.
  8. Serve hot with desired toppings such as shredded cheddar cheese, sour cream, and crushed tortilla chips.

Notes

For best flavor, don’t skip browning the beef. Rinse the beans to reduce sodium and improve flavor. For a thicker chili, leave the lid off for the last 30 minutes. This chili freezes well for up to 3 months.
