  • 12 ounces (340 grams) fresh green beans, trimmed
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste (optional)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C).
  2. In a mixing bowl, whisk together honey, Dijon mustard, olive oil, and a pinch of salt and pepper if desired until smooth and glossy.
  3. Pat the chicken breasts dry with paper towels and place them on a lined or greased baking sheet.
  4. Brush or spoon the honey mustard glaze evenly over both sides of the chicken breasts.
  5. Toss the trimmed green beans in the remaining glaze in the bowl and spread them around the chicken on the sheet pan in a single layer.
  6. Roast on the middle rack for 20-25 minutes, until the chicken reaches an internal temperature of 165Β°F (74Β°C).
  7. Optional: Broil for 2-3 minutes at the end for extra caramelization, watching closely to avoid burning.
  8. Remove from oven and let the chicken rest for 5 minutes before slicing.
  9. Serve the chicken alongside the roasted green beans, spooning any pan juices over the top.

If green beans are thick, slice them lengthwise or add earlier to ensure even roasting. Tilt the pan halfway through cooking to baste chicken with glaze if it pools.
