These Easy Air Fryer Garlic Parmesan Pumpkin Seeds are a happy accident turned into a go-to fall snack. They’re quick, crunchy, and packed with savory garlic and cheesy flavor, perfect for snacking or topping soups and salads.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (pepitas)
  • 1 tablespoon melted butter or olive oil
  • 1 teaspoon garlic powder
  • 2 tablespoons grated Parmesan cheese
  • ½ teaspoon salt (or to taste)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the seeds: If using fresh pumpkin seeds, separate them from the pulp and rinse in a colander under cool water. Pat very dry with a clean kitchen towel or paper towels. Let air dry for 5 minutes while preheating the air fryer.
  2. Preheat the air fryer to 350°F (175°C) for 3 minutes.
  3. In a medium mixing bowl, combine the dried pumpkin seeds with 1 tablespoon melted butter (or olive oil). Toss well to coat.
  4. Add 1 teaspoon garlic powder and ½ teaspoon salt. Toss again to distribute evenly.
  5. Sprinkle 2 tablespoons grated Parmesan cheese over the seeds. Toss gently to coat. The cheese will stick to the butter and form clumps.
  6. Transfer the seasoned seeds to the air fryer basket in a single, even layer. Do not overcrowd. Air fry at 350°F (175°C) for 5 minutes.
  7. After 5 minutes, shake the basket and break up any clumps with a spatula. Return to the air fryer and cook for another 3-5 minutes, until golden brown and fragrant.
  8. Immediately transfer the seeds to a plate or baking sheet to cool completely (at least 10 minutes). They will crisp up as they cool.
  9. If using, sprinkle with fresh parsley, toss gently, and serve warm or at room temperature.

Notes

Dry the seeds thoroughly to ensure crispiness. Watch the salt as Parmesan is salty. For a dairy-free version, use olive oil and nutritional yeast. If seeds are chewy, cook 1-2 minutes more. Store in an airtight container at room temperature for up to 5 days. Re-crisp in air fryer at 300°F (150°C) for 2-3 minutes if needed.
