A quick and easy fall dessert featuring a spiced pumpkin base topped with a yellow cake mix and glazed with apple cider for a comforting seasonal treat.

Ingredients

Scale
  • 15 oz canned pumpkin puree
  • 15.25 oz boxed yellow cake mix (e.g., Duncan Hines or Betty Crocker)
  • 1 cup apple cider
  • 1 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup (113 g) butter, sliced thinly
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and allow it to reach temperature for 10-15 minutes.
  2. In a medium bowl, combine canned pumpkin, granulated sugar, cinnamon, nutmeg, salt, and vanilla extract if using. Stir until smooth and evenly mixed.
  3. Pour and spread the pumpkin mixture evenly into the bottom of a 9×13-inch baking dish. Smooth the surface with a spatula.
  4. Sprinkle the yellow cake mix evenly over the pumpkin layer without pressing down.
  5. Distribute thin slices of butter evenly over the dry cake mix.
  6. Slowly pour the apple cider over the entire dish, covering as much surface as possible without washing away the cake mix.
  7. If using, scatter chopped pecans or walnuts on top.
  8. Bake on the middle rack for 40-45 minutes until bubbly, golden crust forms, and the center is firm but moist. Tent with foil if the top browns too quickly.
  9. Let the cake rest for about 15 minutes before serving to allow the glaze to set.

Notes

Slice butter thinly to ensure even melting and avoid greasy pockets. Do not stir layers once combined to maintain distinct textures. Use room-temperature ingredients for smoother mixing and even baking. Let cake rest after baking to thicken glaze and prevent runniness. If top browns too fast, tent with foil halfway through baking.
