Ingredients

Scale
  • 2 large or 3 medium sweet potatoes (about 1.5 lbs total)
  • 12–16 slices regular-cut bacon
  • 1/3 cup pure maple syrup
  • 2 tablespoons unsalted butter
  • 2 tablespoons packed brown sugar
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon flaky sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • Toothpicks (soaked in water for 10 minutes)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. If using a wire rack, place it on the lined baking sheet.
  2. Peel sweet potatoes and cut into 1-inch cubes (about 24-30 cubes).
  3. Place sweet potato cubes on the prepared baking sheet. Drizzle with 1 tablespoon olive oil, sprinkle with 1/4 teaspoon salt and a pinch of black pepper. Toss to coat evenly.
  4. Roast sweet potatoes for 10 minutes until just starting to soften but still firm.
  5. While sweet potatoes roast, make the maple glaze: In a small saucepan over medium heat, combine maple syrup, butter, brown sugar, cayenne pepper (if using), and black pepper. Stir until butter melts and sugar dissolves, about 3-4 minutes. Remove from heat and let cool slightly.
  6. Cut bacon slices in half crosswise.
  7. Wrap each sweet potato cube with a half-slice of bacon and secure with a soaked toothpick. Place seam side down on the wire rack or baking sheet.
  8. Brush maple glaze generously over the bacon-wrapped bites. Reserve about 1/3 of the glaze for later.
  9. Bake for 15 minutes. Remove from oven, flip each bite using tongs, and brush with reserved glaze.
  10. Return to oven and bake for another 10-15 minutes until bacon is crispy and caramelized.
  11. Remove from oven and let cool for 5 minutes. Sprinkle with flaky sea salt. Remove toothpicks before serving or leave them in for easy grabbing.

Notes

Par-roasting the sweet potatoes first prevents the bacon from burning before the sweet potato is tender. Soak toothpicks in water for 10 minutes to prevent burning. For best results, use a wire rack to allow air circulation and crispier bacon. If the glaze becomes too thick, add a splash of water or maple syrup to thin it out.
