Ingredients

Scale
  • 2 medium ripe bananas
  • 1 1/2 cups (135g) rolled oats
  • 1/2 cup (45g) protein powder (mild vanilla whey or plant-based)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs, room temperature
  • 1/2 cup (120g) Greek yogurt (plain or vanilla)
  • 1/4 cup (60ml) maple syrup or honey
  • 1 tsp vanilla extract
  • Optional add-ins: 1/4 cup chopped walnuts or pecans, 1/4 cup mini dark chocolate chips, 2 tbsp flaxseed meal

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin or line with paper liners.
  2. Mash the bananas in a large bowl until mostly smooth with a few small lumps remaining.
  3. Add eggs, Greek yogurt, maple syrup, and vanilla extract to the mashed bananas and whisk gently until combined.
  4. In a separate bowl, mix rolled oats, protein powder, baking powder, baking soda, cinnamon, and salt until evenly distributed.
  5. Gradually fold the dry ingredients into the wet mixture with a spatula until just combined; avoid overmixing.
  6. Fold in any optional add-ins like nuts, chocolate chips, or flaxseed meal if using.
  7. Divide the batter evenly among 12 muffin cups, filling each about 3/4 full.
  8. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to avoid dense muffins. Use ripe bananas for natural sweetness and moisture. If batter is too dry, add a splash of milk or water. Start checking muffins at 18 minutes to prevent overbaking. Store muffins in an airtight container at room temperature for up to 2 days, refrigerate up to a week, or freeze up to 3 months wrapped individually.
