  • 1 teaspoon salt
  • 1 teaspoon freshly cracked black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons olive oil

Instructions

  1. Prepare the rub by combining brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using) in a mixing bowl. Stir until evenly mixed.
  2. Pat the drumsticks dry with paper towels to help the rub stick and promote crisp skin.
  3. Drizzle olive oil over the drumsticks and toss to coat evenly.
  4. Sprinkle the rub generously over the drumsticks, massaging it into the skin to coat every piece.
  5. Preheat the grill to medium-high heat, about 375°F to 400°F (190°C to 205°C). If using charcoal, wait until coals are covered with white ash.
  6. Place the drumsticks on the grill grate, spacing them out for even heat circulation.
  7. Grill for 25-30 minutes, turning every 6-8 minutes to avoid burning and ensure even cooking. Watch for the sticky glaze forming on the skin.
  8. Check doneness with a meat thermometer; internal temperature should reach 165°F (74°C). If no thermometer, cut into the thickest part to ensure juices run clear.
  9. Remove drumsticks from the grill and let rest for 5 minutes before serving to lock in juices.
