Ingredients

Scale
  • 6 to 7 medium apples (about 3 pounds), a mix of Granny Smith and Honeycrisp
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (2 sticks)
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup light brown sugar, packed
  • 1/2 cup chopped pecans
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F. Position a rack in the middle of the oven.
  2. Brown the butter: Cut 1 cup of butter into pieces and add to a skillet over medium heat. Melt completely, then cook, swirling occasionally, until the milk solids turn golden brown and you smell a nutty aroma (about 4-5 minutes). Immediately pour into a heatproof bowl to stop cooking.
  3. Prep the apples: Peel, core, and slice the apples into 1/4-inch thick slices.
  4. Make the filling: In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, and salt. Let sit while making the streusel.
  5. Make the streusel: In a separate bowl, whisk together oats, flour, brown sugar, pecans, cinnamon, and salt. Pour the slightly cooled brown butter over the dry ingredients and stir until moistened and clumps form.
  6. Assemble the crisp: Spread the apple mixture evenly in a 9×13-inch baking dish. Sprinkle the streusel evenly over the top.
  7. Bake: Place the dish on a baking sheet and bake for 45-50 minutes, until the filling is bubbly and the topping is golden brown. If browning too fast, tent with foil for the last 10 minutes.
  8. Rest: Let the crisp cool on a wire rack for at least 15-20 minutes before serving.

Notes

For best results, use a mix of Granny Smith and Honeycrisp apples. Toast pecans lightly before adding to streusel for extra flavor. Let the crisp rest before serving to allow the filling to set. Can be assembled up to 24 hours in advance and refrigerated; add 10 minutes to baking time.
