These easy buttery spritz cookies with almond extract are crisp on the outside, tender on the inside, and hold their shape perfectly. Made with simple ingredients, they’re ready in under 30 minutes and perfect for any occasion.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 2/3 cup (133g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups (250g) all-purpose flour

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper or silicone baking mats. Do not grease the sheets.
  2. Cream the butter and sugar together. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3 minutes. Scrape down the sides of the bowl halfway through.
  3. Add the egg and extracts. Beat in the egg, almond extract, and vanilla extract until fully combined.
  4. Mix the dry ingredients. In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Prepare your cookie press. Fit your cookie press with your desired disk. Fill the press with the dough. Hold the press upright and perpendicular to the baking sheet. Press down firmly, then lift straight up.
  6. Bake the cookies. Place the baking sheets in the preheated oven and bake for 8-10 minutes, or until the edges are just barely golden. The centers should still look slightly pale.
  7. Cool completely. Let the cookies cool on the baking sheet for 2 minutes, then transfer them to a cooling rack.

Notes

If the dough is too soft and cookies spread, chill the dough for 10 minutes before pressing. If the dough is too stiff, let it sit at room temperature for a few minutes. Use ungreased baking sheets to help cookies hold their shape. Store in an airtight container at room temperature for up to 1 week. Freeze for up to 3 months.
