Quick and kid-approved mini pizza bagel bites that are perfect for school lunches, combining crispy bagel edges with gooey cheese and tangy pizza sauce.

Ingredients

Scale
  • Mini bagels (plain or everything, preferably plain for milder flavor)
  • 1 ½ cups shredded mozzarella cheese (about 170g), low-moisture preferred
  • ½ cup pizza sauce (120ml), store-bought or homemade
  • About 20 mini pepperoni slices (optional), turkey pepperoni for leaner option
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 tablespoon olive oil for brushing

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Slice the mini bagels in half and lay them cut side up on the prepared baking sheet. Brush each half lightly with olive oil.
  3. Spread about 1 teaspoon of pizza sauce evenly over each bagel half, avoiding overloading.
  4. Sprinkle shredded mozzarella generously on top of the sauce, about 1 to 2 tablespoons per bagel half.
  5. Add optional toppings like mini pepperoni slices or a light dusting of grated Parmesan cheese. Sprinkle dried oregano or Italian seasoning.
  6. Bake in the preheated oven for 10-12 minutes until cheese is bubbly and slightly golden. Optionally broil for 1-2 minutes for extra crispiness, watching closely.
  7. Remove from oven and let cool for 3-5 minutes before serving or packing.

Notes

Do not overload sauce or cheese to avoid sogginess. Use low-moisture mozzarella for best melt. Brush bagels with olive oil to crisp edges. Watch oven closely if broiling to prevent burning. Let cool before packing to avoid condensation.
