  • 1½ teaspoons ground cinnamon
  • 2 tablespoons granulated sugar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the peaches. Cut each in half, remove the pit, and slice each half into 4-5 wedges, about ½-inch thick.
  3. In a small bowl, whisk together the brown sugar, granulated sugar, cinnamon, and salt until no lumps remain.
  4. Use a little of the melted butter to grease the bottom and sides of an 8×8 or 9×9 inch baking dish.
  5. Arrange the peach slices in a single layer in the prepared dish.
  6. Drizzle the vanilla extract and remaining melted butter evenly over the peaches.
  7. Sprinkle the cinnamon-sugar mixture evenly over the buttered peaches.
  8. Bake on the middle rack for 15-18 minutes, until peaches are tender and juices are bubbling and syrupy. For deeper caramelization, broil for the last 1-2 minutes, watching closely.
  9. Remove from oven and let cool on a wire rack for 5 minutes.
