Easy Copycat Starbucks Pumpkin Cream Cold Brew

This copycat Starbucks pumpkin cream cold brew is a quick and easy 5-minute recipe that delivers the perfect fall drink at home. With simple ingredients and a clever jar-shaking method, you get a thick, spiced foam that floats on cold brew for a delicious and satisfying treat.

  • 1 cup (240 ml) cold brew coffee
  • ¼ cup (60 ml) heavy cream
  • 2 tablespoons (30 g) pumpkin puree (100% pure, not pie filling)
  • 1 tablespoon (15 ml) maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • A pinch of cinnamon (for garnish)
  • A handful of ice cubes

Instructions

  1. Fill a tall glass with ice cubes, leaving about an inch of space at the top.
  2. In a small bowl or directly in the glass, combine 1 cup of cold brew concentrate with ½ teaspoon of vanilla extract and 1 tablespoon of maple syrup. Stir gently until the syrup dissolves. Taste and adjust sweetness if desired.
  3. In a pint-sized jar with a tight-fitting lid, add ¼ cup of heavy cream, 2 tablespoons of pumpkin puree, 1 tablespoon of maple syrup, ½ teaspoon of vanilla extract, and ¼ teaspoon of pumpkin pie spice. Screw the lid on tightly.
  4. Shake the jar vigorously for 30-45 seconds until the mixture is thick and creamy. If still runny, shake for another 15 seconds. Do not over-shake.
  5. Pour the pumpkin cream foam over the back of a spoon onto the cold brew to help it float on top. Start pouring slowly in the center of the glass.
  6. Sprinkle a tiny pinch of cinnamon or extra pumpkin pie spice over the top of the foam.
  7. Serve immediately. Stir gently if desired and enjoy.

Notes

For extra thick foam, chill the jar and cream in the freezer for 5 minutes before shaking. Use 100% pure pumpkin puree, not pumpkin pie filling. The foam mixture (without shaking) can be stored in the fridge for up to 2 days. For a dairy-free version, use full-fat coconut cream.
