Easy Cozy Thermos Chicken Noodle Soup Recipe for Kids Lunch

A simple, cozy chicken noodle soup designed to stay warm and tender in a thermos, perfect for kids’ lunchboxes and busy school days.

  • 4 cups (1 liter) chicken broth (low-sodium recommended)
  • 1 cup shredded cooked chicken breast (about 6 ounces/170 grams)
  • 1 cup egg noodles (about 2 ounces/60 grams)
  • 1 medium carrot, peeled and diced
  • 1 small celery stalk, finely chopped
  • 1 tablespoon unsalted butter
  • 1 clove garlic, minced (optional)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup (240 ml) water (for cooking noodles separately)

Instructions

  1. Peel and dice the carrot, chop the celery finely, mince the garlic, and shred the cooked chicken breast into bite-sized pieces. Set aside.
  2. In a medium saucepan, melt 1 tablespoon of unsalted butter over medium heat (about 2 minutes). Add the diced carrots, celery, and garlic. Sauté gently for 5 minutes until the veggies are soft but not browned.
  3. Pour in 4 cups (1 liter) of chicken broth and bring the mixture to a gentle simmer. Let it cook uncovered for 10 minutes, stirring occasionally.
  4. While the broth simmers, bring 1 cup (240 ml) of water to a boil in a small pot. Add 1 cup (about 2 ounces/60 grams) of egg noodles and cook for exactly 5 minutes or until al dente. Drain and rinse with cold water to stop cooking and prevent sticking.
  5. Stir the shredded chicken and fresh parsley into the simmering broth. Heat for another 2 minutes to warm the chicken through.
  6. Add salt and pepper to taste, keeping it mild for kids. Optionally, add a pinch of poultry seasoning or thyme.
  7. Preheat the thermos by filling it with boiling water for 5 minutes, then drain.
  8. Drain the noodles well and place them at the bottom of the preheated thermos. Pour the hot broth, chicken, and veggies over the noodles. Seal tightly.
  9. The soup is now ready to go and should stay warm and delicious until lunchtime.

Notes

Cook noodles separately and rinse with cold water to prevent mushiness. Preheat the thermos with boiling water before packing soup to keep it warm longer. If broth thickens by lunchtime, stir in a splash of hot water to loosen it.
