Ingredients

Scale
  • 1 pound lean ground beef (85/15)
  • 1 medium yellow onion, diced
  • 3–4 garlic cloves, minced
  • 3 medium Russet potatoes, peeled and diced into 1/2-inch cubes
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups low-sodium beef broth
  • 1 cup whole milk
  • 8 ounces cream cheese, softened and cubed
  • 2 cups sharp cheddar cheese, shredded
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: crumbled bacon, sliced green onions, extra shredded cheddar, pickles

Instructions

  1. Prep the vegetables: Peel and dice the potatoes into 1/2-inch cubes. Dice the onion, carrots, and celery into small, uniform pieces. Mince the garlic. Keep the potato cubes in a bowl of cold water until ready to use.
  2. Add everything to the slow cooker: Place the raw ground beef, diced potatoes, onion, carrots, celery, and minced garlic in the slow cooker. Break the ground beef into small chunks with your hands or a spoon.
  3. Add the liquids and seasonings: Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Add 1 teaspoon salt and 1/2 teaspoon black pepper. Stir everything together until evenly distributed.
  4. Cook on low or high: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are fork-tender and the beef is fully cooked.
  5. Shred the beef: About 30 minutes before serving, use two forks to break up the ground beef into smaller pieces.
  6. Add the cream cheese and milk: Cut the softened cream cheese into small cubes and add it to the slow cooker. Pour in the milk. Stir gently until the cream cheese is mostly melted. Cover and cook on low for another 20-30 minutes, stirring occasionally, until fully incorporated.
  7. Add the cheddar cheese: Gradually sprinkle in the shredded cheddar cheese, stirring constantly. Let it cook for another 5-10 minutes until the soup is thick and creamy.
  8. Taste and adjust: Adjust seasoning with more salt and pepper if needed. If too thick, add a splash of milk or broth. If too thin, let it cook uncovered for 10-15 minutes.
  9. Serve and enjoy: Ladle into bowls and top with your favorite cheeseburger toppings.

Notes

Don’t brown the beef first—cooking it raw in the broth keeps it tender and saves a dirty pan. Cut potatoes into small, even cubes for uniform cooking. Soften cream cheese before adding to prevent clumping. Add cheese gradually to avoid graininess. Skim excess fat if using higher fat beef. This soup tastes even better the next day.
