  • 4 boneless, skinless chicken breasts (about 1 ½ pounds / 680 g)
  • 12 ounces (340 g) sliced cremini or white button mushrooms
  • 3 cloves garlic, minced
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) low sodium chicken broth
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • Salt and freshly cracked black pepper, to taste
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Optional: ¼ cup (60 ml) dry white wine (e.g., Sauvignon Blanc)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season generously with salt, pepper, and onion powder on both sides.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add chicken breasts and sear for about 2-3 minutes per side until golden brown but not cooked through. Remove and set aside.
  3. In the same skillet, add the remaining olive oil. Toss in the sliced mushrooms and sauté for 5-7 minutes until browned and their liquid evaporates.
  4. Add minced garlic in the last minute of sautéing, stirring constantly to avoid burning.
  5. If using white wine, pour it in now to deglaze the pan, scraping up browned bits with a wooden spoon. Let it simmer for 2-3 minutes until slightly reduced.
  6. Place the seared chicken breasts in the slow cooker. Pour sautéed mushrooms and garlic evenly over them.
  7. Add chicken broth, heavy cream, Dijon mustard, and thyme. Stir gently to combine.
  8. Cover and cook on low for 4-5 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C). Avoid lifting the lid too often.
  9. Once done, taste the sauce and adjust seasoning with salt and pepper if needed.
  10. For a thicker sauce, stir in a cornstarch slurry (1 teaspoon cornstarch mixed with 1 tablespoon cold water) and cook on high for 10-15 minutes to thicken.
  11. Serve by spooning the creamy mushroom sauce over the chicken. Pairs well with mashed potatoes, rice, or buttered noodles.

Searing the chicken and mushrooms before slow cooking enhances flavor and texture but can be skipped if short on time. Use a meat thermometer to avoid overcooking chicken. For a thicker sauce, add cornstarch slurry at the end. Dairy-free option: substitute heavy cream with coconut cream. Gluten-free if using certified gluten-free chicken broth.
