  • 4 soft flour tortillas, 8-inch size
  • 8 oz cream cheese, softened to room temperature
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 8 oz thinly sliced deli ham, preferably low sodium
  • 1 cup shredded cheddar cheese
  • 2 green onions, finely chopped
  • 2 tablespoons fresh parsley, chopped (optional)
  • Freshly ground black pepper, to taste
  • Optional: pinch of garlic powder or smoked paprika
  • Optional: substitute turkey for ham

Instructions

  1. Soften the cream cheese by taking it out of the fridge about 30 minutes before starting.
  2. In a mixing bowl, combine softened cream cheese, mayonnaise, and Dijon mustard. Mix until smooth and creamy.
  3. Stir in finely chopped green onions, parsley (if using), shredded cheddar cheese, and freshly ground black pepper. Adjust seasoning to taste.
  4. Place one tortilla flat on a cutting board. Spread about 1/4 of the creamy mixture evenly, leaving a 1/2 inch border around the edges.
  5. Layer thin slices of ham evenly over the cream cheese mixture, covering the entire surface.
  6. Starting from one edge, carefully roll the tortilla into a tight log shape, keeping it snug but gentle to avoid tearing.
  7. Wrap the rolled tortilla tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes to firm up.
  8. Remove from the fridge, unwrap, and slice the roll into 1-inch thick pinwheels using a sharp serrated knife.
  9. Arrange on a plate or pack directly into lunchboxes.

Notes

Warm tortillas for 10 seconds in the microwave wrapped in a damp paper towel if cracking occurs. Chill roll-ups before slicing to maintain shape and prevent filling from oozing. Prepare filling the night before to save time. Do not freeze due to cream cheese texture changes.
