  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about ยฝ cup)
  • 1 cup wild rice blend (rinsed)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ยฝ cup dry white wine (optional, or extra broth)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • ยผ cup fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients first. Dice the onion, carrots, and celery into roughly equal-sized pieces. Mince the garlic. Rinse the wild rice blend in a fine-mesh strainer under cold water for about 30 seconds. Pat the chicken thighs dry with paper towels and season them generously with salt and pepper on both sides.
  2. Brown the chicken thighs. Heat 2 tablespoons of olive oil in your Dutch oven over medium-high heat until it shimmers. Place the chicken thighs in the pot in a single layerโ€”don’t crowd them. Cook undisturbed for 4 to 5 minutes until the underside is golden brown and releases easily. Flip and cook for another 3 to 4 minutes. Transfer the browned thighs to a plate and set aside. Do not wipe out the pot.
  3. Sautรฉ the vegetables. Reduce the heat to medium. Add the diced onion, carrots, and celery to the pot. Cook, stirring occasionally, for 5 to 6 minutes until the vegetables have softened and the onion is translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Deglaze the pot. If using wine, pour it in and stir, scraping up any browned bits. Let it simmer for 2 minutes until reduced by about half. If skipping wine, add an extra ยฝ cup of chicken broth and scrape up the bits.
  5. Add the rice and liquids. Pour in the rinsed wild rice blend, chicken broth, dried thyme, dried rosemary, and the bay leaf. Stir together. Nestle the browned chicken thighs back into the pot, along with any accumulated juices. Bring to a gentle boil, then reduce heat to low, cover, and let simmer.
  6. Simmer until tender. Cook covered for 45 to 50 minutes. Check at the 40-minute markโ€”the rice should be tender and most of the liquid absorbed. If the rice is still firm and liquid is low, add another ยผ cup of broth or water and continue cooking.
  7. Finish with cream. Once the rice is tender and the chicken is cooked through (internal temperature of 165ยฐF), remove the pot from the heat. Transfer the chicken to a cutting board and let rest. Stir in the heavy cream until smooth. If too thick, add a splash of broth or milk; if too loose, let sit uncovered for 5 minutes.
  8. Shred or slice the chicken. Once cool enough to handle, shred with two forks or slice into bite-sized pieces. Return the chicken to the pot and stir gently. Taste and adjust salt and pepper. Remove and discard the bay leaf.
  9. Rest and serve. Let the casserole sit for 5 to 10 minutes before serving. Spoon into bowls, garnish with fresh parsley, and enjoy.

Don’t rush the browning of the chicken; it builds flavor. Always rinse the wild rice to avoid grittiness. Add the cream at the end to prevent curdling. The casserole thickens as it sits; add extra broth when reheating if needed.
