A quick and fun snack combining creamy peanut butter and sweet bananas rolled in tortillas, perfect for kids and picky eaters.

  • 2 medium ripe bananas, peeled and sliced lengthwise
  • 1/2 cup creamy peanut butter
  • 4 small flour tortillas (6 inches diameter)
  • 12 tablespoons honey or maple syrup (optional)
  • 2 tablespoons chopped nuts or seeds (optional)
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Peel the bananas and slice each one lengthwise into two long halves (about 6 inches long). Set aside.
  2. Lay out a tortilla on a flat surface. Using a spoon or spatula, spread about 2 tablespoons (30 g) of creamy peanut butter evenly over the entire tortilla, leaving about 1/2 inch border around the edges.
  3. If using, sprinkle ground cinnamon lightly over the peanut butter, then drizzle 1/2 tablespoon of honey or maple syrup evenly.
  4. Lay two banana halves side by side along one edge of the tortilla, close to where you’ll start rolling.
  5. Carefully roll the tortilla tightly over the bananas, pressing gently to keep it compact. Chill in the fridge for 5 minutes if needed to firm up.
  6. Using a sharp knife, slice the roll into bite-sized pieces about 1 inch thick. Wipe the knife with a damp cloth between cuts if it sticks.
  7. Sprinkle chopped nuts or seeds on top of the rolls for garnish if desired.
  8. Serve immediately or cover and refrigerate for up to 24 hours.

Notes

Use slightly firm bananas for easier rolling. Warm peanut butter slightly if too stiff for spreading. Chill rolls briefly if they are slipping. Use a serrated or sharp knife and wipe blade between cuts for neat slices. Substitute almond or sunflower seed butter for peanut allergies. Wrap tightly and refrigerate up to 24 hours; banana may brown slightly.
