  • 2 pounds boneless, skinless chicken breasts (about 34 breasts)
  • 16 ounces cream cheese, softened to room temperature
  • 1 cup buffalo wing sauce (like Frank’s RedHot)
  • 1 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional garnishes: sliced green onions, fresh chives, or extra crumbled blue cheese

Instructions

  1. Place the 2 pounds of boneless, skinless chicken breasts in the bottom of your slow cooker. Season lightly with salt, pepper, garlic powder, and onion powder.
  2. Cut the 2 tablespoons of unsalted butter into small pieces and scatter them over the chicken. Pour 1 cup of buffalo wing sauce evenly over the top.
  3. Cover and cook until the chicken is tender and easily shreds with a fork (3-4 hours on low or 1.5-2 hours on high). The internal temperature should reach 165°F.
  4. Carefully remove the cooked chicken from the slow cooker and place it on a cutting board or large bowl. Use two forks to shred it into bite-sized pieces.
  5. While the chicken is cooling slightly, add the 16 ounces of softened cream cheese to the liquid remaining in the slow cooker. Whisk or stir until the cream cheese is fully melted and the mixture is smooth.
  6. Return the shredded chicken to the slow cooker. Add 1 cup of ranch dressing, 1 cup of shredded cheddar cheese, and 1 cup of shredded Monterey Jack cheese. Stir until everything is well combined.
  7. Cover and cook for another 15-20 minutes on low, or until the cheeses are fully melted and the dip is hot and bubbly. Stir once halfway through.
  8. If using, sprinkle the 1/2 cup of crumbled blue cheese and some sliced green onions on top. Switch the slow cooker to the ‘warm’ setting and serve directly from the pot with tortilla chips, celery sticks, or crusty bread.

Notes

For best results, soften cream cheese to room temperature before adding. Shred chicken while still warm for easier handling. Adjust heat by using mild wing sauce or adding extra ranch. Keep dip on ‘warm’ setting after cooking to prevent separation. Can be made ahead and refrigerated for up to 4 days; reheat in slow cooker on low.
