Easy Crockpot Game Day Queso with Chorizo

This smoky, creamy queso with chorizo is the ultimate game day dip. Made in the slow cooker, it’s set-it-and-forget-it easy and always a crowd-pleaser.

  • 1 pound fresh chorizo sausage, casings removed
  • 1 block (16 ounces) white American cheese, cut into pieces
  • 1 block (8 ounces) cream cheese, softened to room temperature
  • 1 can (10 ounces) Ro-Tel diced tomatoes and green chilies, undrained
  • 1 cup evaporated milk
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin (optional)
  • 1 tablespoon pickle juice
  • Optional toppings: chopped fresh cilantro, diced jalapeño, sliced green onions, extra crumbled chorizo

Instructions

  1. Brown the chorizo in a skillet over medium-high heat, breaking it up with a wooden spoon, until cooked through and slightly crispy, about 6 to 8 minutes. Drain excess grease, leaving a little for flavor.
  2. Spray the inside of a 4-quart or larger slow cooker with nonstick cooking spray. Add the cubed cream cheese and white American cheese pieces.
  3. Pour in the undrained Ro-Tel and evaporated milk. Sprinkle with smoked paprika, garlic powder, and cumin (if using). Add the pickle juice.
  4. Transfer the cooked chorizo to the slow cooker and stir everything together.
  5. Cover and cook on LOW for 1 hour. Stir, then continue cooking for another 30 to 60 minutes, stirring occasionally, until completely smooth and well combined.
  6. Adjust consistency: if too thick, stir in a splash of milk; if too thin, cook uncovered for 15 to 20 minutes.
  7. Switch slow cooker to WARM setting. Garnish with desired toppings and serve with tortilla chips.

Notes

Don’t rush the melting process; low and slow prevents graininess. If queso separates, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) over low heat. Pickle juice adds brightness without tasting like pickles.
