This crockpot honey garlic chicken is the ultimate easy weeknight dinner. With just 5 minutes of prep, you get tender, flavorful chicken in a sweet and savory sauce that’s perfect over rice.

  • 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds total)
  • ½ cup honey
  • ⅓ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon olive oil
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • Sesame seeds (optional, for garnish)
  • Chopped green onions (optional, for garnish)

Instructions

  1. In a medium mixing bowl, whisk together honey, soy sauce, minced garlic, ketchup, and olive oil until smooth.
  2. Place chicken breasts in the bottom of a crockpot in a single layer.
  3. Pour the honey garlic sauce evenly over the chicken.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken reaches an internal temperature of 165°F and shreds easily.
  5. About 30 minutes before serving, mix cornstarch with cold water in a small bowl to make a slurry.
  6. Remove chicken from the crockpot with tongs and set aside. Pour the cornstarch slurry into the liquid in the crockpot and whisk gently. Cover and cook on HIGH for 15-20 minutes until the sauce thickens.
  7. Shred the chicken with two forks or serve whole. Return shredded chicken to the sauce and stir to coat.
  8. Garnish with sesame seeds and chopped green onions if desired. Serve immediately over rice or with vegetables.

Notes

For best results, sear the chicken in a hot skillet before adding to the crockpot. Do not skip the cornstarch slurry step to avoid watery sauce. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
