This Easy Crockpot Honey Garlic Chicken Thighs recipe is a love letter to a lost Vietnamese sandwich shop’s honey-glazed chicken. It delivers deep caramelized honey, punchy garlic, and tender meat that falls off the bone, all while you go about your day.

Ingredients

Scale
  • 2 lbs (about 900g) boneless, skinless chicken thighs
  • 1/2 cup (170g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 4–5 cloves garlic, minced
  • 2 tbsp (16g) cornstarch (optional, for thickening)
  • 2 tbsp (30ml) water (for slurry)
  • Sesame seeds and sliced green onions (optional garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat if desired. Place thighs in a single layer in the crockpot.
  2. In a small bowl, whisk together honey, soy sauce, and minced garlic. Pour evenly over the chicken.
  3. Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until chicken is tender and reaches an internal temperature of 165°F (74°C).
  4. Using tongs, transfer cooked chicken to a plate or cutting board. Do not discard the sauce.
  5. Pour the remaining liquid from the crockpot into a small saucepan. In a separate bowl, whisk cornstarch and cold water until smooth. Bring sauce to a simmer over medium heat, then slowly whisk in the slurry. Stir for 2-3 minutes until thickened into a glossy glaze.
  6. Return chicken to the crockpot or a serving dish. Pour thickened sauce over chicken and toss gently to coat.
  7. Garnish with sesame seeds and sliced green onions if desired. Serve immediately over steamed rice, noodles, or roasted vegetables.

Notes

For best results, use fresh garlic and avoid lifting the lid during cooking. The sauce will look thin initially; thickening on the stovetop is key. Leftovers taste even better the next day.
