Easy Crockpot Meatloaf with Brown Sugar Glaze

A tender, moist meatloaf cooked in the slow cooker with a sticky-sweet brown sugar glaze that caramelizes against the edges. Perfect for busy weeknights—just mix, shape, and let the crockpot do the work.

  • 2 pounds ground beef (80/20 blend)
  • 1 cup plain breadcrumbs
  • 2 large eggs, beaten
  • 1 small yellow onion, finely diced (about ¾ cup)
  • 3 cloves garlic, minced
  • ½ cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme (optional)
  • ½ cup ketchup
  • ⅓ cup packed brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard powder

Instructions

  1. Line your slow cooker with parchment paper or aluminum foil, leaving overhang for handles.
  2. In a small bowl, mix together ½ cup ketchup, ⅓ cup packed brown sugar, 1 tablespoon apple cider vinegar, and 1 teaspoon mustard powder. Set aside ¼ cup of this glaze for brushing on top later.
  3. In a small skillet over medium heat, cook the diced onion with a drizzle of oil for 3-4 minutes until translucent. Add the minced garlic and cook for 30 seconds more. Let cool.
  4. In a large mixing bowl, combine 2 pounds ground beef, 1 cup breadcrumbs, 2 beaten eggs, the sautéed onion and garlic, ½ cup milk, 2 tablespoons Worcestershire sauce, 1 teaspoon salt, ½ teaspoon pepper, and 1 teaspoon dried thyme. Add the remaining glaze mixture (not the reserved ¼ cup).
  5. Mix gently with your hands until just combined. Do not overmix.
  6. Transfer the mixture to the lined slow cooker and shape into a loaf, leaving at least 1 inch of space between the meat and the sides of the crockpot.
  7. Brush the reserved ¼ cup of glaze generously over the top and sides of the meatloaf.
  8. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. (LOW is recommended for best texture.)
  9. Check for doneness: internal temperature should reach 160°F in the center, or juices run clear when pierced with a knife.
  10. Turn off the slow cooker and let the meatloaf rest for 10-15 minutes. Use the parchment handles to lift it out onto a cutting board. Slice into 1-inch thick pieces and serve with accumulated juices spooned over the top.

Notes

For best results, use 80/20 ground beef to keep the meatloaf moist. Do not skip lining the slow cooker with parchment—it makes removal easy. Sautéing the onions first prevents crunchy bits. Leave a 1-inch gap around the meatloaf for the glaze to caramelize. Avoid lifting the lid during cooking to maintain heat.
