Instructions

  1. Peel and slice 4-5 ripe peaches. Toss them gently with 3/4 cup granulated sugar, 1 tablespoon lemon juice, and 1/2 teaspoon ground cinnamon in a large bowl. Let sit while preparing the topping.
  2. Preheat oven to 375°F (190°C).
  3. In another bowl, whisk together 1 cup all-purpose flour, 1/4 cup packed brown sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
  4. In a separate small bowl, mix 1/2 cup melted unsalted butter, 1/2 cup milk, and 1 teaspoon vanilla extract. Combine wet and dry ingredients until just blended; do not overmix.
  5. Pour the peach mixture into a 9×9-inch baking dish, spreading evenly. Spoon the batter on top in dollops, leaving some peach juices visible.
