  • Juice of half a lemon
  • 2 tablespoons fresh parsley, chopped
  • 8 ounces (225g) spaghetti or linguine

Instructions

  1. Bring a large pot of salted water to a boil (about 4 quarts). Add 8 ounces (225g) of spaghetti or linguine and cook for 8-10 minutes or until al dente. Stir occasionally to prevent sticking. Reserve 1/2 cup (120 ml) of pasta water before draining.
  2. While pasta cooks, pat shrimp dry with paper towels to ensure a good sear. Season lightly with salt and pepper.
  3. Heat 1 tablespoon olive oil and 2 tablespoons (30g) butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 1.5-2 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Reduce heat to medium, add remaining 2 tablespoons (30g) butter. Once melted, add minced garlic and red pepper flakes (if using). Stir for about 1 minute until fragrant but not browned.
  5. Return shrimp to the skillet, squeeze lemon juice over everything, and toss to coat. Add drained pasta and a splash of reserved pasta water to loosen the sauce if needed. Toss everything together for 1-2 minutes, letting the flavors meld. Add chopped parsley and adjust seasoning with salt and pepper.
  6. Plate the pasta immediately, sprinkle with grated Parmesan cheese if desired, and serve.
