  • 1/2 cup sliced black olives (optional)
  • 1/2 cup diced tomatoes (fresh or canned, drained)
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, thinly sliced (optional)
  • Tortilla chips for serving
  • Optional garnishes: diced avocado, pickled jalapeños, hot sauce, extra sour cream

Instructions

  1. Preheat oven to 350°F (175°C). Let cream cheese soften at room temperature for 30 minutes, or microwave on low for 15-20 seconds.
  2. In a medium mixing bowl, combine softened cream cheese, taco seasoning, and sour cream. Mix until smooth and well combined (about 2 minutes with a hand mixer).
  3. Spread the cream cheese mixture evenly into a 9×13 inch baking dish, smoothing to the edges (about 1/2 inch thick).
  4. Pour salsa over the cream cheese layer and spread gently without stirring.
  5. Sprinkle shredded cheese evenly over the salsa layer, covering completely.
  6. Add black beans and corn on top of the cheese layer, distributing evenly. Add olives if using.
  7. Bake for 15-20 minutes, until cheese is melted and bubbly and edges are slightly golden. For a browner top, broil 1-2 minutes.
  8. Remove from oven and let rest for 5 minutes to set.
  9. Top with diced tomatoes, green onions, cilantro, and jalapeño slices.
  10. Serve immediately with tortilla chips.
