Ingredients

Scale
  • 1 loaf (about 1 pound) day-old French bread or sourdough bread, cut into ¾-inch cubes
  • 1 pound ground pork sausage (mild or spicy)
  • 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 large yellow onion, diced
  • 3 stalks celery, diced
  • 4 tablespoons unsalted butter
  • 2 cups low-sodium chicken or turkey broth
  • 1 large egg, lightly beaten
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional but recommended)

Instructions

  1. Preheat oven to 300°F (150°C). Spread bread cubes on a baking sheet and toast for 10-12 minutes until dry and slightly golden. Let cool completely.
  2. In a large skillet over medium heat, cook the sausage, breaking it up with a wooden spoon, until browned and cooked through (8-10 minutes). Transfer to a plate with a slotted spoon, leaving about 1 tablespoon of drippings in the pan.
  3. Add butter to the same skillet. Once melted, add onion, celery, and apples. Sauté over medium heat for 5-7 minutes until onions are translucent and apples have softened. Stir in sage and thyme; cook 1 minute more.
  4. In a large mixing bowl, combine toasted bread cubes, cooked sausage, and sautéed mixture. Toss gently.
  5. In a small bowl, whisk together broth, beaten egg, salt, pepper, and nutmeg. Pour over bread mixture and toss until evenly moistened (like a damp sponge).
  6. Preheat oven to 375°F (190°C). Transfer stuffing to a greased 9×13-inch baking dish. Cover with foil and bake for 25 minutes. Remove foil and bake 15-20 minutes more until top is golden and crispy. For extra crispiness, broil 2-3 minutes at the end.

Notes

For make-ahead: assemble up to step 4, cover, and refrigerate for up to 24 hours. Add 10 minutes to covered baking time. For gluten-free: use gluten-free bread and certified gluten-free broth. For dairy-free: substitute olive oil or vegan butter. For vegetarian: omit sausage, add 8 oz sautéed mushrooms and an extra apple, use vegetable broth.
