  • 1/4 cup milk (whole milk preferred, or dairy-free alternative)
  • 1/2 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup finely chopped onion (yellow or red)
  • 1/2 cup chopped spinach (fresh or frozen, thawed and squeezed dry)
  • 1/4 cup cooked and crumbled bacon or sausage (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Non-stick cooking spray or butter (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a 12-cup muffin tin with non-stick spray or butter.
  2. Prep your veggies: Dice the bell pepper and onion into small, even pieces. If using fresh spinach, give it a rough chop. If using frozen spinach, thaw completely and squeeze out every drop of water.
  3. Cook the aromatics: Heat a small skillet over medium heat with a tiny splash of oil. Sauté the onion and bell pepper for 2-3 minutes until softened. Add the spinach and cook for another minute until wilted. If using bacon or sausage, cook in the same pan until crispy, then set aside to cool.
  4. Whisk the eggs: In a large mixing bowl, crack the 8 eggs. Add the milk, salt, pepper, and garlic powder. Whisk vigorously for about 30 seconds until the mixture is uniform and slightly frothy.
  5. Add the mix-ins: Stir in the shredded cheese, cooked veggies, and cooked meat (if using). Mix gently until everything is evenly distributed.
  6. Fill the muffin tin: Pour the egg mixture into the prepared muffin cups, filling each about 3/4 full. Use a spoon to distribute the fillings evenly.
  7. Bake: Place the muffin tin on the middle rack and bake for 15-18 minutes. The egg cups are done when the edges are set and the tops are lightly golden. A toothpick inserted into the center should come out clean.
  8. Cool and release: Let the egg cups cool in the tin for 5 minutes. Then, run a butter knife around the edge of each cup to loosen it, and gently pop them out. Transfer to a cooling rack to cool completely before storing.

Notes

Pre-cook veggies and drain excess moisture to prevent watery egg cups. Use room temperature eggs for best texture. Grease the muffin tin well to prevent sticking. Let egg cups cool in the tin for 5 minutes before removing. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
