These Easy No-Bake Peanut Butter Protein Bites are a quick, healthy snack that comes together in just 5 minutes. Made with simple pantry ingredients like peanut butter, oats, and honey, they are perfect for meal prep, pre-workout fuel, or a satisfying treat any time of day.

Ingredients

Scale
  • 1 cup creamy peanut butter (room temperature)
  • 1/2 cup honey (or maple syrup for vegan)
  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup ground flaxseed
  • 1/2 cup mini chocolate chips (semi-sweet or dark)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt (for sprinkling)

Instructions

  1. In a large mixing bowl, combine 1 cup creamy peanut butter, 1/2 cup honey, and 1/2 teaspoon vanilla extract. Stir until smooth and glossy.
  2. Add 1 1/2 cups old-fashioned rolled oats, 1/3 cup ground flaxseed, and 1/2 cup mini chocolate chips. Mix until no dry oats remain. If too dry, add a tablespoon of honey or milk; if too wet, add more oats.
  3. Check consistency: squeeze a small amount in your hand; it should hold together. Adjust as needed.
  4. Line a baking sheet or plate with parchment paper. Using a small cookie scoop or tablespoon, scoop portions and roll into smooth balls (about 18-20 bites).
  5. Sprinkle a tiny pinch of sea salt over the tops and press gently to adhere.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.

Notes

Use room temperature peanut butter for easier mixing. If mixture becomes too sticky while rolling, wet hands slightly with cold water. For best texture, chill for at least 30 minutes. Flavors deepen after a day in the fridge.
