A quick and easy low-carb snack featuring turkey and cheese rolled into bite-sized pinwheels without bread. Perfect for busy afternoons or last-minute gatherings.

  • 8 ounces thinly sliced deli turkey breast (nitrate-free if possible)
  • 6 ounces cream cheese, softened
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 cup fresh spinach leaves, washed and dried
  • 2 stalks green onions, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon chopped fresh parsley or dill (optional)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 10 minutes or microwaving for 10 seconds.
  2. Mix garlic powder, black pepper, green onions, fresh herbs, and optional Dijon mustard into the softened cream cheese.
  3. Lay out 4-6 large turkey slices overlapped on a clean cutting board or plastic wrap, forming an 8 by 10 inch rectangle.
  4. Spread the cream cheese mixture evenly over the turkey slices, leaving a small border around the edges.
  5. Sprinkle shredded cheese evenly over the cream cheese layer, then layer fresh spinach leaves on top.
  6. Starting from one long edge, roll the turkey slices tightly into a log using plastic wrap or parchment paper to keep it compact.
  7. Wrap the roll tightly in plastic wrap and refrigerate for at least 30 minutes to set.
  8. Remove from fridge, unwrap, and slice into 1-inch thick rounds using a sharp knife.
  9. Arrange pinwheels on a platter or store in an airtight container in the fridge for up to 3 days.

Notes

Use room temperature cream cheese for easy spreading. Roll firmly but gently to avoid squeezing out filling. Chill before slicing to help pinwheels hold shape. Use large, thin turkey slices for best results. Can substitute smoked turkey or dairy-free cream cheese for variations.
