This easy one-bowl banana bread is the answer. No mixer needed, just a little elbow grease and a fork. It comes out perfectly moist with a tender crumb every single time.

  • 3 medium overripe bananas (about 1 ½ cups mashed)
  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (180g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup optional mix-ins (chopped walnuts, pecans, chocolate chips, or dried fruit)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line with parchment paper, leaving an overhang on the long sides.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Add melted butter and granulated sugar to the bananas. Stir with a fork until combined.
  4. Add the egg and vanilla extract. Stir vigorously until fully incorporated and the mixture is smooth and glossy, about 30 seconds.
  5. Sprinkle flour, baking soda, and salt evenly over the wet mixture. Gently stir with a fork until just combined (a few streaks of flour are fine). Fold in optional mix-ins if using.
  6. Pour batter into prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let the bread cool in the pan for 10 minutes, then lift out using parchment paper and transfer to a cooling rack. Cool completely before slicing, about 1 hour.

Notes

For dairy-free, use melted coconut oil or vegan butter. For gluten-free, use a 1:1 gluten-free baking blend. If the top browns too quickly after 40 minutes, tent loosely with aluminum foil. Do not overmix the batter.
