This cozy overnight cinnamon roll casserole with cream cheese glaze is a quick and easy breakfast that transforms refrigerated cinnamon rolls into a soft, pudding-like treat. Perfect for holiday brunches or lazy weekends, it requires just 10 minutes of prep the night before and delivers a crowd-pleasing, decadent dish every time.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing (e.g., Pillsbury Grands!)
  • 4 large eggs, room temperature
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar, sifted
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk

Instructions

  1. Grease a 9×13 inch baking dish with butter or non-stick cooking spray.
  2. Open both cans of refrigerated cinnamon rolls and set aside the icing packets. Cut each cinnamon roll into quarters.
  3. Scatter the cinnamon roll pieces evenly in the prepared baking dish.
  4. In a large mixing bowl, whisk together the eggs, milk, heavy cream, vanilla extract, ground cinnamon, and ground nutmeg until completely combined and slightly frothy.
  5. Slowly pour the custard mixture evenly over the cinnamon roll pieces, pressing down any pieces that stick up above the liquid.
  6. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 8 hours, or up to 24 hours.
  7. The next morning, preheat the oven to 350°F (175°C). Remove the casserole from the fridge and let it sit on the counter for about 15 minutes.
  8. Bake for 30-35 minutes, until the top is golden brown, the edges are bubbling, and the center is set but still slightly jiggly. If the top browns too quickly, tent loosely with foil for the last 10 minutes.
  9. While the casserole bakes, make the cream cheese glaze: In a medium bowl, beat the softened cream cheese, softened butter, and reserved icing packets until smooth. Add the powdered sugar and vanilla extract, then beat again. Add milk one tablespoon at a time until you reach a pourable consistency.
  10. Let the casserole cool for about 5 minutes, then drizzle the cream cheese glaze generously over the top. Serve warm.

Notes

Room temperature ingredients matter for smooth custard and glaze. Don’t skip the overnight soak for the best texture. Watch your oven and start checking at 28 minutes. The glaze is generous for a reason. For variations, try adding diced apples, pecans with brown sugar, or mini chocolate chips. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
