  • 1/2 cup (120ml) milk (dairy, almond, oat, or soy)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/4 teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana in a small bowl until almost liquid.
  2. Add peanut butter and stir into mashed banana until fully combined.
  3. Pour in milk and stir until smooth.
  4. Add sweetener, chia seeds, salt, and vanilla extract if using; stir well.
  5. Add rolled oats and stir until all oats are fully coated.
  6. Transfer mixture to a mason jar or airtight container.
  7. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. In the morning, stir and enjoy cold, or add a splash of milk if too thick. Top with sliced banana, peanut butter drizzle, or granola.

Notes

Use old-fashioned rolled oats, not instant or steel-cut. Mash banana very well. Stir twice: before refrigerating and before eating. Add toppings right before eating to avoid sogginess. Keeps in fridge up to 3 days.
