Ingredients

Scale
  • 2 ยพ cups (345g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • ยฝ teaspoon baking powder
  • ยฝ teaspoon salt
  • 1 cup (230g) unsalted butter, softened
  • 1 ยฝ cups (300g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons sour cream or Greek yogurt
  • 1 pint (473ml) vanilla ice cream, slightly softened
  • ยฝ pint (237ml) strawberry or raspberry ice cream, slightly softened
  • Blueberries and sliced strawberries (fresh, for garnish or optional rolling on the edges)
  • Red, white, and blue sprinkles or colored sugar (optional)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
  2. In a medium bowl, whisk together 2 ยพ cups (345g) all-purpose flour, 1 teaspoon baking soda, ยฝ teaspoon baking powder, and ยฝ teaspoon salt. Set aside.
  3. In a large bowl, beat 1 cup (230g) softened unsalted butter with 1 ยฝ cups (300g) granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in 1 large egg and 1 teaspoon pure vanilla extract until combined. Then mix in 2 tablespoons sour cream or Greek yogurt for extra moisture.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Avoid overmixing.
  6. Use a cookie scoop or tablespoon to drop dough balls (about 1 ยฝ tablespoons each) onto prepared baking sheets, spacing them about 2 inches apart. Lightly flatten each ball with the bottom of a glass for even thickness.
  7. Bake for 8-10 minutes or until the edges are just golden and centers look slightly soft.
  8. Remove cookies from the oven and transfer to cooling racks. Let cool completely before assembling.
  9. Soften both vanilla and strawberry ice creams slightly at room temperature for about 5 minutes.
  10. Spread a generous scoop (about 2 tablespoons) of ice cream onto the flat side of one cookie. Top with another cookie, pressing gently to spread the ice cream evenly to the edges.
  11. Optionally, roll the edges of the ice cream sandwiches in fresh blueberries, sliced strawberries, or sprinkles for a festive touch.
  12. Wrap each sandwich individually in plastic wrap or wax paper. Freeze for at least 1 hour to firm up before serving.

Notes

Do not overmix the dough to keep cookies tender. Watch baking time closely to avoid overly crisp cookies. Soften ice cream slightly before assembling for easier spreading. Freeze sandwiches for at least 1 hour before serving to hold shape. Dough can be chilled before baking for thicker cookies. Store assembled sandwiches wrapped tightly in freezer for up to one week.
