  • 2 tablespoons chia seeds or flax seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the pumpkin puree, milk, maple syrup, eggs, and vanilla extract until smooth and well combined.
  3. In a separate medium bowl, mix the rolled oats, baking powder, pumpkin pie spice, cinnamon, and salt until evenly distributed.
  4. Pour the dry ingredients into the wet ingredients. Fold gently with a rubber spatula until just combined and no dry oats are visible. Do not overmix.
  5. If using, fold in chocolate chips, nuts, or seeds gently until evenly distributed.
