A colorful, crunchy, and totally satisfying lunch that comes together in under 10 minutes. The homemade ranch dip is creamy, tangy, and herby, making this veggie box a treat you’ll actually crave.

  • 2 large carrots, peeled and cut into sticks
  • 1 large cucumber, sliced into rounds or sticks
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 cup cherry tomatoes, halved
  • 1 cup sugar snap peas, trimmed
  • 1 cup purple cabbage, thinly sliced
  • 1 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried chives
  • 1 tablespoon lemon juice, freshly squeezed
  • Salt and black pepper to taste
  • 12 tablespoons milk (optional, to thin dip)

Instructions

  1. Make the ranch dip: In a medium mixing bowl, combine Greek yogurt, mayonnaise, fresh dill, fresh parsley, garlic powder, onion powder, dried chives, and lemon juice. Whisk until smooth. Season with salt and pepper to taste. If desired, add milk 1 tablespoon at a time to reach desired consistency. Set aside in the fridge.
  2. Prep the carrots: Wash and peel carrots. Cut off tops and tails. Slice into sticks about 3-4 inches long and 1/2 inch thick.
  3. Prep the cucumber: Wash cucumber. If using English cucumber, leave skin on. Slice into thick rounds (about 1/2 inch thick) or long spears.
  4. Prep the bell peppers: Wash red and yellow bell peppers. Cut off top and bottom, slice down one side to open, remove ribs and seeds. Lay flat and slice into long, 1-inch wide strips.
  5. Prep remaining veggies: Wash cherry tomatoes and halve. Wash and trim ends off snap peas. Finely shred purple cabbage.
  6. Assemble lunch box: Arrange veggies by color in lunch box or container. Place ranch dip in a small, leak-proof container or compartment.
  7. Store: For meal prep, store dip separately from veggies. Dip lasts up to 5 days in fridge; prepped veggies stay crunchy for 3-4 days in airtight container.

Notes

For best flavor, make the dip ahead of time and let it sit in the fridge for an hour or two. Dry veggies thoroughly after washing to keep dip from getting watery. Cut veggies to similar sizes for even dipping.
