The caramelized edges, spicy-sweet honey, salty feta, and crunchy pepitas create an irresistible combination that’s perfect for fall gatherings or weeknight dinners.

Ingredients

Scale
  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons hot honey (or 3 tablespoons honey + 1/2 teaspoon red pepper flakes + pinch cayenne)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup toasted pepitas
  • Fresh thyme (optional, for garnish)
  • Red pepper flakes (optional, for extra heat)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash well. Pat dry with a clean towel.
  3. Cut the squash in half lengthwise. Use a spoon to scoop out the seeds and stringy bits.
  4. Slice the squash into half-moons, about 1/2-inch thick.
  5. Place the squash pieces on the prepared baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat and spread in a single layer.
  6. Roast for 15 minutes.
  7. Flip each piece of squash.
  8. Roast for another 10-12 minutes until tender and deep golden-brown.
  9. While the squash roasts, make the hot honey: In a small bowl, combine honey with 1/2 teaspoon red pepper flakes and a pinch of cayenne. Let steep while squash cooks.
  10. Remove squash from oven and let cool on pan for 2 minutes.
  11. Transfer squash to a serving platter.
  12. Drizzle hot honey over warm squash.
  13. Sprinkle crumbled feta over the top.
  14. Top with toasted pepitas and fresh thyme if using. Serve immediately.

Notes

Don’t overcrowd the pan – use two sheets if needed. Cut pieces evenly (about 1/2-inch thick). Let hot honey steep for at least 10 minutes for best flavor. Add feta after squash has cooled for 2 minutes to prevent melting. Can roast squash up to a day ahead and reheat at 400°F for 5 minutes before adding toppings.
