  • 68 ripe fresh figs, sliced
  • 4 ounces goat cheese, softened to room temperature
  • 1/2 cup chopped walnuts
  • 3 tablespoons honey, plus extra for drizzling
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsalted butter, melted
  • Zest of 1 lemon (optional)
  • A few sprigs fresh thyme (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare candied walnuts: Toss 1/2 cup chopped walnuts with 2 tablespoons granulated sugar and a pinch of salt in a mixing bowl until evenly coated. Spread in a single layer on a parchment-lined baking sheet.
  3. Bake walnuts for 8-10 minutes, stirring halfway through, until golden and glossy. Watch closely to avoid burning.
  4. Toast baguette slices: Brush each slice lightly with melted butter. Arrange on another baking sheet and bake for 5-7 minutes until edges are golden and crisp but not hard.
  5. Prepare goat cheese spread: Soften goat cheese with a fork in a small bowl. Add 1 teaspoon honey and lemon zest if using, mixing until smooth and creamy.
  6. Assemble crostini: Spread a generous dollop of honey goat cheese on each toasted baguette slice. Top with 1-2 slices of fresh fig, then sprinkle with warm candied walnuts.
  7. Finish with a drizzle of honey and garnish with a small sprig of fresh thyme.
  8. Serve immediately while bread is crisp and walnuts are warm and crunchy.

Notes

Candied walnuts can be made a day ahead and stored in an airtight container. Warm slightly before assembling. Use dried figs soaked in warm water if fresh figs are unavailable. For vegan adaptation, use plant-based cheese and replace honey with maple syrup.
