  • 1/4 cup (60 ml) canned coconut cream, chilled
  • 2 tbsp (30 ml) pickle juice from dill pickles
  • 1 tbsp (15 ml) fresh lemon juice
  • 1 tbsp (15 ml) simple syrup (optional)
  • Ice cubes (preferably large)
  • Fresh mint leaves (a few sprigs, optional)
  • Pickle slices (optional garnish)

Instructions

  1. Chill the coconut cream and lemonade soda in the fridge for at least an hour.
  2. Scoop 1/4 cup (60 ml) of coconut cream into a small bowl and whip with a hand mixer or whisk until light and fluffy, about 2-3 minutes, forming soft peaks.
  3. Fill a tall glass with large ice cubes.
  4. In a shaker or mixing glass, combine 12 oz (355 ml) lemonade soda, 2 tbsp (30 ml) pickle juice, 1 tbsp (15 ml) fresh lemon juice, and optional 1 tbsp (15 ml) simple syrup. Stir gently to mix without losing fizz.
  5. Slowly pour the soda mixture over the ice in the serving glass.
  6. Using a spoon, gently float the whipped coconut cream on top of the soda to create a creamy cap.
  7. Garnish with fresh mint leaves or a slice of pickle on the rim.
  8. Serve immediately with a straw or spoon for stirring.
