  • 1 teaspoon mustard seeds (optional)

Instructions

  1. Wash Kirby cucumbers thoroughly under cold water. Trim off the blossom ends to keep spears crisp. Slice each cucumber into 4-6 spears of uniform thickness.
  2. In a mixing bowl, combine 1 cup white vinegar, 1 cup water, 1 tablespoon granulated sugar, and 2 tablespoons sea salt. Stir until sugar and salt dissolve completely.
  3. Place smashed garlic cloves and fresh dill sprigs at the bottom of each sterilized jar. Add 1 teaspoon black peppercorns, 1 teaspoon mustard seeds, and 1-2 teaspoons red pepper flakes (adjust to preference).
  4. Tightly pack cucumber spears vertically into the jars, leaving about half an inch of headspace.
  5. Pour the brine over the cucumbers until fully submerged. Press down gently to remove air bubbles, leaving a little space at the top.
