A quick and easy recipe for soft, pillowy scrambled eggs enriched with butter and fresh chives, perfect for cozy mornings.

  • 4 large eggs, room temperature
  • 2 tablespoons unsalted butter, softened or cut into small pieces
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons whole milk or cream (can substitute almond milk for dairy-free)
  • Salt to taste (sea salt flakes recommended)
  • Freshly ground black pepper to taste

Instructions

  1. Crack 4 large eggs into a medium bowl. Add 2 tablespoons of whole milk or cream and a pinch of salt. Whisk vigorously until the mixture looks smooth and slightly frothy.
  2. Finely chop about 2 tablespoons of fresh chives and set aside.
  3. Place a non-stick skillet over low heat. Add 2 tablespoons of unsalted butter and let it melt slowly until foamy but not browned.
  4. Pour the egg mixture into the pan. Let it sit undisturbed for about 30 seconds until the edges start to set.
  5. Using a silicone spatula, gently stir the eggs in small circles, scraping the bottom and folding the curds from the edges toward the center. Keep the heat low.
  6. When the eggs are mostly cooked but still slightly runny, fold in the chopped chives and freshly ground black pepper. Stir gently one last time.
  7. Remove the pan from heat just before the eggs look fully set. Serve immediately.

Notes

Cook eggs on low heat to keep them creamy and fluffy. Remove from heat just before fully set as residual heat will finish cooking. If eggs start to brown or stick, reduce heat and add a splash of milk if needed. Fresh chives added at the end preserve their bright flavor.
