A quick and easy no-cook summer recipe featuring ripe avocados stuffed with fresh mozzarella, cherry tomatoes, basil, and balsamic glaze for a refreshing and flavorful bowl.

  • 2 ripe Haas avocados, halved and pitted
  • 4 oz fresh mozzarella balls or sliced mozzarella pearls
  • 1 cup halved cherry or grape tomatoes
  • About 10 small fresh basil leaves, torn or roughly chopped
  • 2 tablespoons balsamic glaze
  • Optional: pinch of sea salt and freshly cracked black pepper

Instructions

  1. Cut the avocados in half lengthwise and remove the pits carefully. If the cavity feels shallow, scoop out a tablespoon or so of flesh to create more room for the filling. Set the avocado halves on your serving plates.
  2. Halve the cherry tomatoes and place them in a mixing bowl.
  3. Tear the mozzarella balls into bite-sized pieces or add the pre-sliced pearls into the bowl with tomatoes.
  4. Roughly chop or tear fresh basil leaves and add them in. Sprinkle a pinch of salt and freshly cracked pepper over the mix, then gently toss everything together to combine.
  5. Spoon the tomato, mozzarella, and basil mixture generously into each avocado half until nicely filled.
  6. Drizzle the balsamic glaze over the stuffed avocados.
  7. Serve immediately to enjoy the fresh, creamy, and vibrant flavors.

Notes

Use ripe but firm avocados to avoid mushiness. Drain mozzarella well to prevent sogginess. Use fresh basil for best flavor. Drizzle balsamic glaze sparingly to keep flavors balanced. Prepare filling up to 4 hours ahead but stuff avocados just before serving to prevent browning. For dairy-free options, substitute mozzarella with marinated tofu or vegan cheese.
