A quick and easy no added sugar slushie made with frozen strawberries and fresh lemon juice, perfect for a refreshing summer treat.

  • 2 cups frozen strawberries (about 300 g), unsweetened and preferably ripe
  • 1/2 cup fresh lemon juice (120 ml), freshly squeezed from about 3-4 lemons
  • 1 cup cold water (240 ml)
  • 1 cup ice cubes (about 200 g), optional but recommended
  • 1 tablespoon honey or maple syrup (optional)
  • Fresh mint leaves, a few sprigs (optional, for garnish)

Instructions

  1. Roll each lemon on the counter with your palm to loosen the juice. Cut them in half and juice using your citrus juicer. Measure out 1/2 cup (120 ml) of fresh lemon juice. This step usually takes about 5 minutes.
  2. Gather 2 cups (300 g) of frozen strawberries, 1 cup (240 ml) of cold water, and 1 cup (200 g) of ice cubes. If you want a touch of sweetness, measure 1 tablespoon of honey or maple syrup.
  3. Add the frozen strawberries, lemon juice, cold water, and ice cubes into the blender. Secure the lid and blend on high for about 30–45 seconds until smooth and slushy. Stop and scrape down the sides if needed to blend evenly.
  4. Give it a quick taste. If it’s too tart, add the optional honey or maple syrup and blend for another 10 seconds. If it’s too thick, add a splash more water and pulse again. The texture should be icy but smooth, like a soft slush.
  5. Pour into chilled glasses or mason jars. Garnish with a sprig of fresh mint if you like. Serve immediately for the perfect icy texture.

Notes

If your blender is not powerful, chop frozen strawberries into smaller pieces before blending to avoid stressing the motor. For a more intense strawberry flavor, let frozen strawberries thaw 5-10 minutes before blending. Avoid overblending to prevent melting the ice and losing the slush texture. Chill glasses beforehand and use ice cubes instead of crushed ice for better texture. Clean blender immediately after use to avoid residue buildup.
