Fresh Caprese Sandwich Recipe with Heirloom Tomatoes

A simple, fresh Caprese sandwich featuring vibrant heirloom tomatoes, creamy mozzarella, and fragrant basil, perfect for a quick and satisfying summer lunch.

  • 2 large ripe heirloom tomatoes (mixed colors if possible)
  • About 12 fresh basil leaves, washed and patted dry
  • 8 oz (225 g) fresh mozzarella ball or pre-sliced mozzarella
  • 4 slices crusty Italian bread, ciabatta, or baguette, toasted lightly
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Pinch of flaky sea salt (like Maldon)
  • Freshly ground black pepper to taste

Instructions

  1. Wash the heirloom tomatoes and slice into about 1/4-inch (6 mm) thick rounds, about 4-5 slices per tomato. Set aside.
  2. Slice the mozzarella ball into slices roughly matching the tomato thickness or separate pre-sliced mozzarella gently.
  3. Pick basil leaves off stems and pat dry. Tear large leaves in half for layering.
  4. Lightly toast bread slices in a toaster or on a grill pan over medium heat until golden-brown and crunchy, about 2-3 minutes per side.
  5. In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, a pinch of salt, and freshly ground black pepper. Adjust seasoning to taste.
  6. On one slice of toasted bread, layer tomato slices evenly and sprinkle a tiny pinch of flaky sea salt over them.
  7. Place mozzarella slices on top of the tomatoes, then scatter fresh basil leaves over the cheese.
  8. Drizzle the olive oil and balsamic mixture generously over the layered ingredients and add more black pepper if desired.
  9. Top with the second slice of toasted bread, press gently, and slice the sandwich in half if desired.

Notes

Pat tomatoes dry with a paper towel before assembling to avoid soggy bread. Assemble just before eating to keep bread crisp. For a melty version, grill the sandwich briefly in a panini press or skillet with a weight until cheese softens. Use dairy-free mozzarella and maple syrup for a vegan version. Substitute gluten-free bread to make it gluten-free.
