Fresh Cucumber Mint Agua Fresca

A refreshing and hydrating drink combining fresh cucumber, mint, lime, and a touch of natural sweetener, perfect for summer and easy to prepare.

Ingredients

  • 2 large English cucumbers, peeled and roughly chopped
  • 1 cup fresh mint leaves, packed
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 4 cups cold filtered water
  • 23 tablespoons honey or agave syrup
  • Ice cubes (optional, for serving chilled)

Instructions

  1. Peel and chop 2 large English cucumbers into chunks (about 4 cups).
  2. Place the chopped cucumber and 1 cup packed fresh mint leaves into a blender or food processor. Blend until smooth, about 1-2 minutes.
  3. Pour the blended mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher. Press with a spoon to extract as much liquid as possible.
  4. Stir in 1/4 cup freshly squeezed lime juice and 2-3 tablespoons honey or agave syrup. Adjust sweetness or acidity to taste.
  5. Pour in 4 cups cold filtered water and stir well. Adjust water amount for desired dilution.
  6. Refrigerate for at least 30 minutes before serving. Serve over ice cubes and garnish with fresh mint sprigs or thin cucumber slices.

Notes

Use fresh, firm English cucumbers for best flavor. Strain the mixture twice for a silky texture. Adjust sweetness gradually. Chill for at least 30 minutes to meld flavors. For a sparkling version, substitute some or all water with sparkling water before serving. Mint leaves should be gently bruised before blending to release aroma.
